Oreo crazy!

Ben is a sucker for Oreo's, while I myself just like one every once in a while. Normally we only get one when other people have them but after a recent trip to the beach with my uncle who works for Nabisco, we ended up coming back with lots of them. Then of course we ended up coming home with a carton of cookies and creme ice cream after our last trip to the grocery store.

Yesterday I came across this recipe on another blog and took this as an opportunity to quell my boredom of a week off of work. I made a few changes but in general, these were amazing and will be in my repertoire of recipes from now on.

1) I crushed my oreos to be much finer than the original recipe called for and I am glad that I did because when I got a few chunky pieces they made the cupcake fall apart.

2) I used crushed oreos in the frosting as well because I am not personally a fan of a garnish that you have to take off and eat separately. Sometimes they are appropriate but when you can make it part of the cupcake or frosting, why not. (Speaking of, I have another cookie recipe where it is appropriate to have the cookie garnish but I will have to share that one later). Now, while this made the cupcake look like it was covered in cement, I promise it tastes nothing like it. I tried piping on the frosting, but I had a chunk of cookie jam the tip so I had to settle with spreading it on.

3) The recipe calls for half an oreo to be on the bottom but it stuck to the liner which then made the cupcake stick to the lining. I will either not include it next time, or spray the bottom of the liner with cooking spray first.

4) My cupcakes took about 10 minutes more in the oven but as any baker knows, every oven is different so monitor them yourself.

Pink, I mean, Strawberry cupcakes

Yay! I finally got to make my favorite summer cake......strawberry cupcakes with strawberry buttercream frosting. I made them for a cookout at our friend Davids pool but we left before most everyone else. I left most of the cupcakes and my pan was returned the next day with all but two gone. I would say that means they were good considering there were only 6 people there when we left. I also love that they are pink. They just seem like the perfect whimsical cupcakes.

Butterscotch and Caramel, an experiment

Whoa! Three weeks went by so fast. I have recently been taking a hiatus from baking so I could try to shape up a bit. However, I had a recipe I came up with and wanted to try for months so I finally gave in and made it. Butterscotch cake with caramel frosting. I had to hurriedly snap the picture before Ben cut into it, so this is not the best shot. Tasted pretty good, so I think I will put it in my repertoire.

Yes, I am a member of the Twilight fanbase, but in my defense, not a rabid one. Last year for the premiere of "New Moon" my friend Heather had a party for all us girls to get together and watch the first movie. I was in charge of baking something so I made red velvet cupcakes with cream cheese icing just dripping with fake blood. The trick was getting the consistency and color right. Ben and I stood over these for an hour playing with blood and I think we got it right.
