Eating in for Date Night

August 13, 2010

Over the past couple of years we have had to watch our money with this darn economy. One of the first luxuries we had to cut were eating out. I hated this because I looked forward every week to enjoying a night out with my husband. Over the past couple of months we started to re-institute date night in a different way, by cooking something really good here at home. During the week we tend to eat something super quick because by the time we get home from work, go to the gym and get back, it is too late to actually cook anything. Therefore, cooking something special on the weekends make its really special. Below are some of the meals we have made recently.

Salmon with savory blueberry sauce, red potatoes and roasted asparagus.
Caprese Steak with steamed green beans and baked potato
Thai turkey burgers, yellow rice and mexican grilled corn
Salmon with Guacamole Salad and mexican grilled corn (we loved this) and peach cobbler
We actually made this last meal with steak the next day. We marinated the steak in garlic, salt, pepper, lime juice and worcestershire sauce and it was so good with the guacamole salad and corn.

This weekend just brings a new meal. I will let you know how that turns out.
