Pumpkin Spiced Latte Cupcakes

I was never a big coffee fan but over the past few years I have learned to love the flavor. I could never drink a whole cup and really, the daily iced coffee drink I make is just coffee flavored milk. After a few months of doing 1 part coffee to 2 parts milk we began adding in a splash of creamer to give it a subtle flavor. My husband loves anything pumpkin flavored but our favorite pumpkin spiced coffee drinks are back in Tennessee. It was lucky we make our own and there are creamers out there that can give us our pumpkin fix during the fall.

However, I know there are a lot of people who love Starbucks Pumpkin Spiced Lattes and they were finally brought back this past week. That, combined with the cooler temperatures we had a for a few days made me crave something fallish to bake this week. That is when I came across this recipe for Pumpkin Spice Latte Cupcakes. The only thing I tweaked was that, if I was going to make a pumpkin cake, I had to make a cream cheese frosting, which I did. I did not get a ton of coffee flavor from them, but really did not mind because everything else about them was awesome!

I think they look just as good as they taste.

This weekend begins my favorite time of the year, autumn. With that comes crisp evenings, changing trees and football. We are heading back to Tennessee for my baby shower and watching my Vols first football game at my dads house with some family and friends. I told my stepmom I would make dessert. I tried to balance easy to transport and creative.

I went with my chocoholic bundt cake but changed up the glaze. Normally it is a chocolate satiny glaze but this time I tried it with white chocolate and colored half of it orange. The white chocolate made it a little more goopy but still tastes good.

Hopefully this is the start to a great season of football!! Go VOLS!!!

What to do with 200 Cake Dots?

I know I have been terrible with this blog for a while. It is not that I am not baking, I am just not baking anything that original lately. I promise I am going to start posting more crafts that I have been working on since getting pregnant and getting our house ready for the munchkin.

For now, I can show you the cake dots I took to the beach last month. For months, I was making cakes that I wanted to make cake dots out of, but not having the energy to do them. So I would bake the cake, make the balls and freeze them. My freezer was overloaded with over 300 of these unfinished cake balls. Going on vacation with 34 people I figured would be the perfect opportunity to get rid of them. From the comments I got, they were thoroughly enjoyed.

This is not how I would originally decorate most of these but I was going for a beachy feel. The two newest flavors are pineapple upside down cake dots at the top and strawberry at the bottom. The rest in between are cookies and cream, lime, chocolate, plain velvet, chocolate mint and chocolate peanut butter.

As for the two new flavors, the strawberry was a huge success but I am going to have to retweak the pineapple upside down ones if I want to try them again. Not sure how I will do that though.

After all of this, I was still left with about 130 chocolate cake dots. I will post later in the baby related posts what I did with these.

Tiramisu Brownies

I had been introduced to Tiramisu Brownies a few years ago but I was set at the task to come up with a recipe. After making 4 batches and tweaking them everytime, I think I did it. They have now become new the favorite for some people, my stepmom included now wants these for her birthday.

The overall batch reminds me of dirt cake, but it is anything but inside.

Red velvet brownies, re-imagined

As I mentioned last week, I made some red velvet cream cheese swirled brownies from a recipe that I had found on-line. They were good but not perfect. So I decided to take my normal cream cheese brownie recipe and make it red velvet. Here are the results......

Ben and I both agree that these are better. I feel that if you are going to make anything chocolate, just adding cocoa powder is not the way to go. You have to have real chocolate, which these brownies do. It just gives them a richer and deeper taste. Definitely a winner recipe here.

One day I was talking to Ben about what I wanted to try making and it hit me. One of my favorite things are cream cheese swirled brownies, how could I make that more interesting. Red velvet! All red velvet is, is a chocolate with a sour factor and dyed red. I scoured the internet and found a recipe that intrigued me. It is from Sunny Anderson on food network. I tried it the other day and have to say, that while it is very good, I am just not sure that red velvet is amazing anywhere other than a cake. This is also a result of us trying Ben & Jerry's red velvet cake ice cream and me being pretty lukewarm about it.

I am not saying that I will never make them again, they are really good. I think I might try tweaking the recipe a bit next time.

Strawberry lemonade pie

I was flipping through Martha Stewart's Living magazine and I ran across a recipe for a strawberry lemonade pie. I am not sure why, but since being pregnant, I am in love with citrus fruits (more so than before). It was not my magazine so I came home and searched for the recipe. I found this one on Pink and Green(s) Livin'. The only adjustments I made was that I was lazy and got a pre-made crust and I did not make the meringue on the top (I am just not a fan). I have planned on getting cool whip but that fell through. Here are some pics of mine when we had it at the beach. Lets just say, my dad started with one piece and had to have a second.

It is not summer until I have made strawberry cupcakes. I also made some strawberry cake dots and experimented with pineapple upside down cake dots. I have not coated them yet, but I am sure I will have pictures coming soon.

Lime cake, 3 ways

Happy Cinco de Mayo! I have been wanting to try making margarita cupcakes for a while now, and of course I finally get to it when I am pregnant and can not have one very important ingredient. So margarita turned into just plain lime, but they are still good.

I decided to do a few things, with this one batter. Idea one, a mini cake for a certain birthday boy I will be seeing this weekend.

Idea two, mini margarita cupcakes to take to my friends on Cinco de Mayo.

Idea three, of course, cake dots.

Here are two of the new cake dot flavors that I am experimenting with. Chocolate Peanut Butter, which are chocolate cake with a peanut butter flavored frosting.

These are Mint Chocolate, which are chocolate on the inside with mint flavored frosting.

Baking Update

I have been a little absent from the blog lately. That is for two reasons.

Reason #1) I have been busy experimenting with new cake dot flavors. It has been kind of time consuming and zapping my energy. I am sure I will have pics of these experiments to post soon. So far I have successfully made Chocolate Peanut Butter, Chocolate Mint and Caramel. Next up are Strawberry, Lemon, Key Lime and Pineapple Upside Down Cake Dots.

Reason #2) Well check out the below pictures and you figure it out. This is some of the baking I have done in the past couple of months.

Here is our little pumpkin at 11 weeks 4 days. We are due October 10th, the day before our anniversary. I am hoping my baking will not slow down and I work this up into a more steady business in the meantime.

I know I am a day late but I did not get a chance to post until now. I always have these great ideas of what to bake after the holiday has past. This year I planned on making some St Patricks Day themed cake dots but, alas, the day I was going make them, well it got away from me. I ended up make a Shortbread toffee that is a twist on a traditional Irish dessert. One of Ben's favorite desserts.

Recipe showdown: Chocolate Chip Cookie Dough Cupcakes

I actually made my first chocolate chip cookie dough cupcake around 2 years ago. It sounded so yummy that I could not pass it up. They were quite labor intensive and took hours to do. You had to:

-Make chocolate chip cookie dough. Make some into super small cookies and bake, and the rest roll into balls, freeze.
-Make cupcake batter. Place frozen balls into cupcake liners and top with cupcake batter. Bake.
-Make an eggless chocolate chip cookie dough
-Make a buttercream frosting. Mix in eggless dough.
-Frost, and top with small cookies

Here was the result. Super yummy! I had no complaints about making them but I knew they were not an everyday baking adventure.

I recently found another recipe for these that skipped the cookie dough step all together. At first I was skeptical that it would even compare to the other recipe but as I was making them, I was loving how they were so much simpler.

-Make cupcake batter. Pour in liners and bake.
-Make cookie dough filling (no eggs). Fill in cupcake when cooled.
-Make frosting and frost cupcakes.

Here are these results. Oddly enough without the cookie dough, these had a more authentic taste. The filling made it really seem like actual raw cookie dough, rather than in the first where it felt like it slightly dried out. The frosting was amazing and was a first for me. The first time I have put flour in a frosting, but it totally added to the texture to the frosting so it more mimicked cookie dough.

Ben said he would like me to make both so he could compare but I informed him that there is no way in heck I am spending that much time in a kitchen. The new recipe is by far better and he admitted that he agreed. I might be making these more often now that they are a bit simpler.

If you have ever watched Nick Jr, or Noggin as it used to be called, you will have seen these guys. Moose and his best buddy Zee.

My little one at work loves them. Even when she was a few months old, she would hear their voice on TV and turn and stare. Her 2nd birthday party was this weekend and I was asked to make her cake again.

In addition to the cake, I also make her felt friends of them. The craft is on Nick Jr's website and I have seen it on TV so many times.

I though that these would be cute because I could get my little one at work involved but when I tried to get her to dip her thumb in the paint she screamed. She did supervise while I did them though.

I have been wanting to try Lemon Lavender Cupcakes for a while. Today I had a day off, and needed a project. It was an experiment that ended up perfect. My house smells so nice and springy, on this cold winter day. They are so different than normal sweet cupcakes but still super tasty.

I was asked to make some cake dots for fund-raising for ALT Pink Foundation. It is an organization that is trying to raise awareness for Inflammatory Breast Cancer and provide support for women diagnosed with IBC. Here are the super cute cake pops I made for them. They sold out in an hour!!!

I had planned on making some for my friend Heather when she had her beautiful baby girl, and it just happened to coincide with when I was making these. The pink was perfect for welcoming the baby too!

On that note, these would be perfect for a Valentine's gift, rather than the boring old chocolates, or conversation hearts. Anyone in Atlanta, place your orders now!
